The Spis take

A stall at Reffen, Copenhagen's big harbourside street-food market on Refshaleøen, where chef Julijs Breitmanis works a coal-fired robata grill. The idea is fun and specific: Asian skewer technique crossed with his Slavic roots, so you get charred meats with soy glazes alongside tangy pickles and things like yuzu-jalapeño egg salad. It's market food, not a sit-down restaurant, and like the rest of Reffen it's seasonal and best in good weather with a beer in hand.
