This is the Gammel Mønt outpost of Hart Bageri, the cult sourdough bakery founded by Richard Hart (ex-Tartine head baker) in partnership with René Redzepi and the Noma crew. The bread is the headline — a benchmark loaf that regularly sells out — but the croissants, cardamom rolls and seasonal pastries are why people queue. It's a genuine Copenhagen baking destination and priced a notch above a corner bakery, which the quality earns.
