Himitsu is a cosy, minimalist build-your-own ramen bar tucked upstairs on Rådhusstræde, where the broths are plant-based and you assemble your own bowl from the options. It's a small, friendly, personalised take on ramen rather than a purist tonkotsu temple, and it earns consistently warm reviews (and a following among halal and veg diners). Opens evenings only, Tuesday to Saturday, so plan around that.
