The Spis take
A serious little Italian enoteca behind Tivoli, family-run since 1999 and in the Michelin Guide, built around a fixed multi-course menu (4-7, up to 8 in white-truffle season) and one of the deepest wine cellars in town — 600+ labels and around 70 Brunellos. This is the address for Sangiovese in Copenhagen and a proper occasion dinner for people who want the wine to lead. Intimate, expensive, and unabashedly for the committed; not a casual drop-in.
