The Spis take

The city-center outpost (opened 2025) of Mother, the Kødbyen pioneer that brought 100% organic sourdough pizza to Copenhagen back in 2010 under Roman chef David Biffani. The wood-fired, naturally leavened pies are the real draw and remain a reliable Copenhagen benchmark; the weekday lunch deal (any pizza for 100 kr, 11–17) is a genuine bargain and there's Italian-style weekend brunch. Purists still argue the original Meatpacking room has more soul, but the pizza itself travels well.
