Paula is Carlsberg Byen's ambitious but relaxed bistro, where classic French craft meets Nordic ingredients and a touch of Japanese precision, built around sustainably caught Danish seafood, organic vegetables and wild game rather than farmed meat. Critics have been warm, Falstaff scoring it 87 and Weekendavisen singling out the vegetable cookery, and the pitch is fine-dining finesse without the formality or the eye-watering bill. Diner reviews are a touch more mixed on service and value, so temper expectations, but for thoughtful, produce-driven cooking it's a strong pick.
