A small, family-run southern-Vietnamese spot out in Valby that a lot of Copenhageners quietly rate as the city's most honest pho - the kind of place Vietnamese diners themselves point you toward over the flashier central options. The beef pho and appetizers like banh khot and spring rolls get the most love, and there's a genuinely good spread of vegan options including a well-regarded vegan pho. It's cosy and welcoming rather than polished, and it's a trek from the center, but that's rather the point.
