This is the noma team's burger joint on Strandgade in Christianshavn — the same crew that ran the legendary 108, now channeling noma's fermentation lab into a genuinely serious craft burger. Expect carefully sourced local produce, deeply savory fermented touches, and a proper wine/beer/cocktail list, in a relaxed neighborhood setting that punches well above typical burger-bar prices. If you want a burger with real pedigree and don't mind paying for it, this is one of Copenhagen's benchmark options; the trade-off is dinner service is fairly tight (evenings), with a separate midday takeaway window.
