Prolog is one of Copenhagen's most respected specialty-coffee names, founded in 2016 and roasting its own lighter-style beans (think berries, nuts, citrus) out on Refshaleøen. Expect carefully brewed coffee, a rotating, seasonal bean list, and good pastries in a tight, brew-focused space rather than a laptop lounge. It's a proper stop for anyone who cares about what's in the cup.
