The Spis take

A small, craft-focused Japanese spot on Vesterbrogade that leans into onigiri, sustainability and Danish produce rather than a big sushi menu. Don't confuse it with the famous Tokyo/Hong Kong Sushi Saito, this is its own low-key Copenhagen operation built around onigiri takeaway, catering and hands-on Japanese cooking classes. Good for a quick, well-made rice snack or if you want to actually learn the craft; keep in mind it runs limited hours and closes for stretches (e.g. summer).
