The Spis take
The original Escalón, opened 1998, tucked below street level by the Fløibanen funicular with one of the city's tiniest kitchens and a warm, cramped room. The tapas are the real thing (patatas bravas, bacon-wrapped dates, salt cod, prawns in white wine) and it fills up fast, though service can wobble when it's slammed. Book on weekends.
