One of Oslo's genuinely exciting recent openings: an omakase counter in the Youngskvartalet from the Made in Oslo group that blends Japanese technique with South American brightness across a seafood-heavy tasting run. You sit at the counter, watch the kitchen work, and let them lead — with a smart wine list and sake cocktails alongside. It's a splurge and reservations matter, but the near-universal praise (and a very high review average) makes it a real destination.
